Red Algae Extract Food Grade Carrageenan Powder is a natural food additive derived from red seaweed. It is a high molecular weight hydrophilic polysaccharide, primarily consisting of K-type, L-type, and λ-type carrageenan. The most widely used and sold type in the market is the K-type refined carrageenan.
Physically and chemically, Carrageenan appears as a white to light yellow-brown powder with strong stability. It remains stable in neutral and alkaline solutions but degrades easily in acidic solutions, especially at a pH below 4.0. K-type carrageenan is sensitive to potassium ions, forming a fragile gel with water secretion.
Carrageenan can be classified into refined and semi-refined (or semi-processed) types based on the production process, with significant differences in strength. Refined carrageenan typically has a strength of around 1500-1800, while semi-refined carrageenan generally has a strength of about 400-500.
In terms of its interaction with proteins, Carrageenan can interact with K-casein in milk protein and proteins in meat solid state through processes such as salt extraction (pickling, tumbling), and heat treatment, leading to the formation of a protein network structure. Carrageenan can strengthen this structure through its interaction with proteins.
